Kambu Dosa
This is one dosa which i made recently and i was surprised how the textured turned out even with no rice. Loved it to the core and it is perfect for breakfast or a light lunch or for dinner as well. Taste great with any chutney, sambar or anything.
About this Recipe
The most common type of millet is pearl millet, also known as Kambu; in Tamil. It has been cultivated since prehistoric times in Africa and the Indian subcontinent. The Sahel zone of West Africa is the crops centre of diversity and suggested area of domestication. Recent archaeobotanical studies have confirmed the presence of
domesticated pearl millet in northern Malis Sahel zone between 2500 and 2000 BC.
In West Africa, pearl millet is a major cereal crop. It is also widely grown in eastern and southern Africa and in semiarid to arid areas of India. The current domestication theory holds that it originated in the northern–central Sahel region of West Africa.

Ingredients for Kambu Dosa Recipe :
Pearl Millet / Bajra /Kambu :
Pearl millet is ground into flour and used in the production of breads, cookies, muffins, chapatis, and biscuits. It lasts no longer than 15 days. Dried bajra grains are ground into a flour that is light brown to greyish in colour and has a nutty flavour.
Whole Urad dal :
When cooked, urad has an earthy flavour and an unusual mucousy texture.

Kambu Dosa or Bajra dosa made by soaking whole pearl millet grains and grinding to a batter. This dosa needs no rice and is highly nutritious.

Ingredients
- Pearl Millet / Bajra ./Kambu - 1 cup
- Whole Urad dal / Ulundu Paruppu - ½ cup
- Fenugreek Seeds / Vendayam / Methi - ½ tsp
- Salt - 1 tsp
- Water as needed
- Oil for pan frying
Instructions
Soak fenugreek seeds and urad dal separately and the millet separates in a bowl with water. Let them soak for 4 to 6 hours.
First take urad dal in a blender and make it into a puree, add little water at a time.
Now transfer this in a large container, take millet in the same mixer and puree again. Pour this into the container.
Add in salt and mix well. Cover and let it ferment overnight.
Next day, give the batter a good mix and make dosa, drizzle oil around the sides and cook till golden on the bottom.
Flip over and cook again.
Serve.

start by grinding the urad dal |

pour it in a large container |

now in the same blender in which you pureed the dal, leave some dal mix in this, it helps to blend the pearl millet well |
